Mrs Bank Rat here. My husband often marvels at my culinary genius and encourages me to do things like Master Chef or Bake Off (he just doesn’t know any better but let’s keep it under wraps). I always try make sure he has good eats on the bank or at least go all out on the odd occasion we fish together. So thought it was about time to share an easy meal that you can prepare and cook on the bank with minimal fuss and prep time.
If you’ve got 15 minutes in between those screaming reels, give this recipe ago. It’s ideal for breakfast but a favourite of ours to have for dinner on the bank too.
One Pot Breakfast Mess
- 4 rashers of bacon
- 4 chipolatas
- 120g button mushrooms
- 6 eggs
- 8 cherry tomatoes
- Grated cheese (if you like)
- Half, small chopped onion (if you like)
Heat your frying pan up so it’s sizzling hot. If you do have a small iron frying pan these work great but what ever’s to hand on the bank.
Fry your sausages first for two to three minutes, add your bacon and turn a few times. This gives your oil or fat for cooking but feel free to drain some off if it’s too much. Once that starts to crisp, chuck in your mushrooms.
At this point you can turn down the heat a little and add your eggs and stir a bit with a fork for two minutes. You can add your tomatoes and onions at this point, if you have a lid or metal plate you can pop over your frying pan put that on and leave for another two to three minutes depending how you like it.
This is great because you can cut it into slices and serve up. You’ll feed two to three but let’s be honest, you’re not going to share your food are you? Not when it’s this good!
